Do you love eggs? We are big fan of eggs, be it boiled or fried. Eggs are an excellent source of choline and protein. These are also a good source of Vitamin D, Folate & Calcium. Eggs are on my weekly menu and I make it at least twice in a week. So let’s get to know about the recipe.
Tomato Egg Masala is something which goes very well with Indian flat breads or any rotis. This tasty and yummy dish is my all-time favourite. And, now even my hubby has joined me to team up. I love the texture and the gorgeous colour of the yolks surrounded by egg whites & tangy tomato masala.
Boiled Egg – 2
Onio – 2, large (finely diced)
Tomatoes – 4, finely chopped
Oil – 2 tbsp
Ginger Garlic Paste – 1 tbsp
Curry Leaves – Few
Mustard Seeds – 1/2 tsp
Chilli Powder – 1.5 tbsp (adjust)
Cumin Powder – 1/2 tsp
Salt to Taste
How to Prepare:
Heat oil in a kadai, splutter the mustard seeds & curry leaves.
Add ginger garlic paste and sauté for 2 – 3 minutes until the raw smell disappears. Now, add the finely diced onions and sauté until transparent. Ensure that you don’t brown the onions.
Then, add chilli powder and cumin powder. Saute for a minute.
Add the finely chopped tomatoes and mix to combine. Add salt and cook covered until fat separates from the sides. Check for the seasoning and if the tomatoes are cooked. When done garnish with coriander leaves and serve hot with any Indian bread/rotis.
Many consider egg as a vegetarian dish. Egg is a very healthy and elders say that this can be included in our everyday meal. I try to include this either way, may be plain omelette or even as boiled egg sprinkling some salt and pepper on it. I’m sure egg is liked by most of us and so this is my version of egg curry a little spicy.
2 Green Chillies, 8 Pods Garlic, 1 tbsp Chopped Ginger, 1 Onion, 1/2 Cup Chopped Coconut, 2 tbsp Coriander Leaves
How to Prepare:
Grind the masala ingredients to a smooth paste and set aside.
Heat oil in a kadai, fry the chopped onions till golden brown. Add all the spice powders except garam masala and fry for a minute or two. Add the ground masala paste, tomato puree and fry for till the oil separates. Now, add salt, water and bring it to boil till the gravy is thickened or reaches the required consistency.
Add garam masala powder and boil for a minute. Make equal halves from the boiled eggs and drop them in the gravy. Garnish with coriander leaves and serve hot with rice/roti.
Masala Omelette is one of the quickest recipes for breakfast with bread slices. This can be also had as a side-dish with rice and curry. In this omelette I have added tomaotoes, onions and chilli powder to give a spicy touch. So, here’s my version of masala omelette.

2 Eggs, 2 tsp Chilli Powder, 2 Chopped Onions, 2 tbsp Oil, Sal to Taste
How to Prepare
In a bowl, break the eggs. Add salt, red chilli powder and onions. Now beat the mixture until they are blended well. Heat the frying pan, add oil and pour the mixure making sure that it spreads evenly. Cook till 5 minutes and serve hot.
4-Eggs, 1 medium Onion(chopped), 3 Garlic Pods(crushed), 3 Green Chillies(chopped), 3 Tomatoes, 1/4 tsp Turmeric Powder, 1/2 tsp Garam Masala, 2 Tbsp Oil, Salt to Taste,1/2 Pepper, 2 tbsp Coriander Leaves
How to prepare:
Beat eggs well with a few spoons of milk. Heat oil in a pan and add the chopped onions, garlic and chillies. Fry till the onion is transparent. Add the tomatoes and turmeric powder. Fry till oil separates from the mix. Add the garam masala, pepper powder and fry for few minutes. Add the eggs and sauté well. Now, add salt and remove from flame. Garnish with coriander leaves and serve hot.
4 Eggs, 1/2 Cup Milk, 1/2 tsp Pepper Powder, Oil, Salt to Taste
How to Prepare:
Break the eggs into a bowl, add milk, salt and pepper. Beat this mixture till all the ingredients are blended well. Heat oil in a pan and swirl it around for the oil to coat all sides. Keep the flame in low and pour the beaten egg mixture. Now, let it cook and scrape if it sticks to the pan. Keep stirring else the eggs with get burnt. Cover the pan and switch off the flame. Serve hot.
Note: This can be accompanied with bread as sandwiches for breakfast.
4 Eggs (Boiled & Peeled), 2 Onion, 2 tomatoes, 1/2 Cup Mushroom, 2 Spring Onion, 1 tsp Saunf,1/2 Capsicum, 2 tsp Coriander powder, 2 tsp Chilli powder, Salt to taste, 1/2 tsp Jeera powder, Oil
How to Prepare:
Heat oil/ghee in a pan, add saunf and chopped little spring onions. Add chopped onions and sauté until it turns golden brown, add chopped mushrooms, capsicum and sauté for 2 minutes. Add chopped tomatoes, turmeric powder, coriander powder, chilli powder, cumin powder, and salt. Mix well and fry for a while till the oil separates. Add boiled eggs,little water and cook till eggs the gravy gets thickened. Garnish with remaining spring onions and serve hot.
