Bread Upma

Most of us keep stock of bread readily at home. This makes a quick and easy breakfast dishes like sandwich, bread toast.

I prepared this delicious dish as an evening snack. Bread Upma can be served as breakfast too. If served for kids, reduce the quantity of chilli powder or exclude chilli sauce.

So, here I share a wonderful snack.

Ingredients:

15 Slices Bread, 1/2 tsp Chilli Powder, 2 tbsp Oil, 1 tbsp Ghee, 2 Tomatoes (puree), 1 tsp Chilli Sauce, 1 tsp Tomato Ketchup, Coriander Leaves, Salt to Taste

How to Prepare:

Take bread slices and make small cubes. In a flat pan, fry these cubes with little ghee till golden brown.

Heat oil in a pan, fry the sliced onions. Add tomato puree, tomato ketchup, chilli sauce and sauté for 3-4 minutes. Add chilli powder, salt and mix well. Now, add bread cubes and give it a turn so that the masala is coated well. Garnish with some chopped coriander leaves and serve.

Soya Chunks & Potato Cutlet

Soya is generally referred as a vegetarian meat. This is a very healthy food as this is rich in protein. Soya potato cutlet a snack gives a spicy touch with the spice powders added. I’m sure you will like this dish as an evening snack with a cup of hot tea.

Soya Chunks & Potato Cutlet

Ingredients:

1 Cup Soya Chunks, 2 Medium Potato(cooked & mashed), 1 Large Onion(chopped), 3 Green Chillies(chopped), 1 tsp Chilli Powder, 1/2 tsp Garam Masala, 1/2 tsp Cumin Powder,1/2 tsp Amchur Powder, 1/2 tsp Chaat Masala, Salt to Taste

For Frying:

1 Egg (beaten), Bread Crumbs(optional), Oil

How to Prepare:

Soak the soya chunks in hot water for about 30 minutes and squeeze excess water. Put the soya chunks in a blender and grind coarsely.

Add all the ingredients in a large mixing bowl and mix well. Now, shape a handful of cutlet, like a round cookie 2-3 inches in diameter and 1 inch thick. Dip each cutlet in the beaten egg and roll in bread crumbs to give it a thin coating. Repeat the same process to the remaining mixture.

Drop 2 tbsp of oil on a pan and fry until golden brown. Gently turn them and fry. Remove from pan and serve hot with tomato sauce.

Note: You can use 2 tbsp of maida mixed with little water instead of egg. Dip each cutlet in this batter and continue the same process.

In my recipe I have not used bread crumbs.

Sabudana Vada

Sabudana vada, is a very special snack of Maharashtra and goes very well with a cup of masala tea. This is also an ideal food hich is prepare during navratri fasts. This is vada made of sabudana is very crunchy and delicious snack.

Ingredients:

1 Cup Sabudana, 1/2 Cup Peanuts, 1 Potato(Boiled), 8 Green Chillies(chopped), Salt To Taste, Oil to deep fry

How to Prepare:

Soak washed sabudana for 2 – 3 hours. Drain excess water and add all the ingredients except oil. Mix well and make small ball. Heat oil in a pan, fry the balls till they turn light brown and crispy. Drain the excess oil and serve hot with tomato ketchup.

Dahi Vada (1)

Dahi Vada

Having idly and vada is very usual in a week or two. How to make a little difference in your regular breakfast schedule was always on my mind. I am sure most of us do this thinking a lot. So when we are up doing the regular vada’s we can make these crispy fried vadas in to smooth curd dips for your taste buds. What makes them tastier are the cumin and chili powders used in the making of curd mixture. I would say this is delicious and savoring snack or breakfast. This is one of the popular dishes in South India. Give it a try and I am sure you will love it…

Ingredients:

1 Cup Urad Dal, 2 tbsp Moong Dhal, 3 Cups Curd/Yogurt, 2 tbsp Cumin Seeds, 3 Red Chillies, 1/4 tsp Sugar, Salt to Taste, Oil for deep fry, Coriander leaves for garnishing

How to Prepare:

Soak both the dals for 6-8 hours or overnight and grind it to smooth paste. Now, deep fry the vadas in oil and put the vadas in warm water for 5-10 seconds. Take out from the water and squeeze any excess water & keep aside. Beat the curd nicely with a spoon along with salt and sugar. Roast cumin seeds and red chillies and grind it to powder, add this to the beaten curd with very little water. Put the vada in the beaten curd and keep it for 5 minutes. Now, garnish with coriander leaves and serve.

Aloo Bonda

Ingredients:

4 Potatoes (Boiled and mashed), 2 Cups Besan Powder, 2 Green Chillies(chopped), ½ tsp Chilli Powder, Salt to Taste, ¼ tsp Garam Masala, Oil for deep fry

How to Prepare:

Put besan powder, ¼ tsp chilli powder, salt in a mixing bowl and make a batter of medium consistency. In another bowl, add all the ingredients except oil and besan powder and mix well. Make a small ball and dip one by one in the batter and deep fry. Fry until it turns golden brown. Serve hot with tomato sauce.

Onion Pakora

Ingredients:

1 Cup Besan, 1 tsp Rice Flour, 3 Green Chilli (finely chopped), 1 Cup Onion (Thin Sliced), 1 tsp Chilli Powder, 2 String Curry Leaves(chopped), Coriander Leaves(Chopped), Salt to Taste, Oil for deep Fry.

How to Prepare:

In a mixing bowl, put onion slices, besan, green chillies, coriander and curry leaves, chilli powder and salt. Mix all the ingredients well. Sprinkle little water if required as onion has enough moisture in it. Heat oil in a pan, roughly make small fritter and deep fry in oil. Fry until it is golden brown. Drain out excess oil and serve hot.
