Bread Upma

Most of us keep stock of bread readily at home. This makes a quick and easy breakfast dishes like sandwich, bread toast.

I prepared this delicious dish as an evening snack. Bread Upma can be served as breakfast too. If served for kids, reduce the quantity of chilli powder or exclude chilli sauce.

So, here I share a wonderful snack.

Ingredients:

15 Slices Bread, 1/2 tsp Chilli Powder, 2 tbsp Oil, 1 tbsp Ghee, 2 Tomatoes (puree), 1 tsp Chilli Sauce, 1 tsp Tomato Ketchup, Coriander Leaves, Salt to Taste

How to Prepare:

Take bread slices and make small cubes. In a flat pan, fry these cubes with little ghee till golden brown.

Heat oil in a pan, fry the sliced onions. Add tomato puree, tomato ketchup, chilli sauce and sauté for 3-4 minutes. Add chilli powder, salt and mix well. Now, add bread cubes and give it a turn so that the masala is coated well. Garnish with some chopped coriander leaves and serve.

Murukku

This is a traditional Indian savory snack prepared with rice flour as the main ingredient. This crispy savory snack is usually prepared during festivals. My Mom usually prepares this during Christmas season. It was so simple that even I tried to prepare this crispy spiral and tasted very good.

Try this and I’m sure you will also like it.

Here goes the recipe..

Ingredients:

500 gms Rice Flour, 2 tbsp Urad Dal(roasted & powdered), 2 tbsp Roasted Gram Flour/ Pottu Kadala Maavu, 2 tbsp Sesame Seeds , 1 tsp Ajwain/Carom, 1 Pinch Asafoetida, 50 gms Butter, 8-9 Dry Red Chilli(optional), Salt to Taste, Oil for deep frying

How to Prepare:

Dry roast dry red chillies and give it a whirl in the mixer.

Sieve together rice flour, urad dal powder and roasted gram flour. Now, add asafoetida, ajwain, sesame seeds, chilli flakes, salt and mix well. Now, add butter to this dry mixture and start to knead with your finger tips.

Add water little by little and mix till everything comes together and knead into soft dough. Prepare the murukku press/mould by greasing the insides with little oil. I used the single star nozzle and triple star nozzle. You can use any nozzle of your choice.

Put a large lump into the mould and start pressing the dough to give it round shape or any shape and set aside.

When the oil is hot, put one by one carefully in the oil and fry till golden brown. Put them on a kitchen towel to remove excess oil. Now, allow them to cool down and store in an air tight container.

Ingredients:

3 Potatoes (boiled & mashed), 4 Green Chillies(chopped), 1 tsp Ginger(chopped), 1/2 tsp Coriander Powder, Salt to Taste, 1 tbsp Coriander Leaves, 1/2 tsp Cumin Powder, 1/2 tsp Mango Powder(Amchur), Oil for frying

How to Prepare:

In a mixing bowl, add all the ingredients except oil and mix well. Make a small ball and flatten it to about 1/2 inch high. Pan fry these with little oil until both sides are golden brown. Serve hot with green chutney.

Having idly and vada is very usual in a week or two. How to make a little difference in your regular breakfast schedule was always on my mind. I am sure most of us do this thinking a lot. So when we are up doing the regular vada’s we can make these crispy fried vadas in to smooth curd dips for your taste buds. What makes them tastier are the cumin and chili powders used in the making of curd mixture. I would say this is delicious and savoring snack or breakfast. This is one of the popular dishes in South India. Give it a try and I am sure you will love it…

Ingredients:

1 Cup Urad Dal, 2 tbsp Moong Dhal, 3 Cups Curd/Yogurt, 2 tbsp Cumin Seeds, 3 Red Chillies, 1/4 tsp Sugar, Salt to Taste, Oil for deep fry, Coriander leaves for garnishing

How to Prepare:

Soak both the dals for 6-8 hours or overnight and grind it to smooth paste. Now, deep fry the vadas in oil and put the vadas in warm water for 5-10 seconds. Take out from the water and squeeze any excess water & keep aside. Beat the curd nicely with a spoon along with salt and sugar. Roast cumin seeds and red chillies and grind it to powder, add this to the beaten curd with very little water. Put the vada in the beaten curd and keep it for 5 minutes. Now, garnish with coriander leaves and serve.
