Vegetable Pulav is a hit at home in recent days. This recipe was shared by my friend’s mom. I would always love this pulav made by her. So, here’s the recipe in detail. Hope you all also like this.

Ingredients:

1 Cup Rice (250gms), 2 tbsp Oil/Ghee, 1 1/2 Cup Mixed Vegetables (Carrot, Potato, Beans, Peas), 1/2 tsp Garam Masala, 2 Bay Leaves, 1 Tomato (optional), Salt to Taste

For Masala:

4 Cloves, 4 Cardamom, 2 Cinnamon Stick, 5 Green Chillies, 1/2 Cup Coconut, 1/2 Cup Coriander Leaves, 10 Pepper Corns, 1 tsp Ginger Garlic Paste

How to Prepare:

In a blender, add all the masala ingredients and make a smooth paste.

Heat oil/ghee in a pan and fry bay leaves. Now, add the masala paste, chopped tomato and fry till the raw smell leaves. Add the chopped vegetables and cook for 2 minutes. Pour 2 cups of water, garam masala, rice and mix well. Cover and cook until the rice is cooked. Serve vegetable pulav with raitha.

Note: Reduce the green chillies as per your taste and include red chilli powder if required.
