Methi Chicken/Chicken with Dried Fenugreek Leaves

Methi Chicken is a delicious and a distinctive flavorful dish. The dried fenugreek leaves used in this dish adds a wonderful taste with an exotic aroma. Believe me this dish is a real treat for your family on a special occasion.

So here the recipe,

Ingredients:

  1. Chicken – 250 gms
  2. Dried Fenugreek Leaves/Kasuri Methi – 3 tbsp
  3. Oil – 2 tbsp
  4. Onion Large – 1 (finely diced)
  5. Tomatoes – 2 (pureed)
  6. Chilli Powder – 1 tbsp
  7. Yoghurt – 2 tbsp
  8. Coriander Powder – 1 tsp
  9. Ginger Garlic Paste – 2 tbsp
  10. Turmeric Powder – 1/4 tsp
  11. Salt to Taste

Methi Chicken

How to Prepare:

  • Clean and wash the chicken pieces. Marinade the chicken pieces with curd, half tablespoon (1/2 tbsp) of ginger garlic paste and little salt for 20 minutes.
  • Take some water in a bowl and soak kasuri methi in it.
  • Heat oil, in a pan and sauté the finely chopped onions until transparent.
  • Add the ginger garlic paste and sauté for 2 minutes.
  • Now, add the kasuri methi and sauté for a while.
  • Add the chopped tomato along with all the spice powders and mix well. Cover and cook for 3 – 4 minutes.
  • Then, add the marinated chicken salt, water as required. Cook covered for about 15 – 20 minutes. Check for the seasoning and if the gravy is thickened as per your consistency.
  • Serve hot with rotis or even with plain rice.

Spicy Chicken Delight

Chicken recipes are quiet common for me and my family. There are a few recipes that are our favorite and I don’t mind repeating them again and again. This is very flavorful recipe with an awesome aroma and texture. This is one such wonderful recipe which is liked by us.

There are many variations in preparing Chicken Curry and this recipe is prepared with very basic ingredients which are often used in a non-vegetarian dish. The green chillies used here makes the spice level little high, but I’m sure the taste will sure be yummy too….

So, here I bring you the most relished recipe from my kitchen to yours….

Ingredients:

  1. 1/2 Kg Chicken
  2. 2 tbsp Oil
  3. 1 Onion(small)
  4. 1/2 tsp Chilli Powder
  5. 1/4 Garam Masala
  6. Salt to taste

For Masala:

  1. 1 small bunch Coriander Leaves
  2. 1 Onion, 5 Green Chilli
  3. 1 tbsp Ginger Garlic Paste
  4. 3 Cloves
  5. 4 Cardamom
  6. 2 Cinnamon (small stick)

How to Prepare:

  1. Put all the masala ingredients in a blender and blend to a smooth paste and set aside.
  2. Heat oil in a kadai, sauté the chopped onion till transparent.
  3. Add the blended masala paste to this and fry for some time until the flavor is released.
  4. Add the chicken pieces, salt and cook covered until done.
  5. To this add the garam masala and mix well. Serve hot with rotis, nans or rice.

Chicken Biryani – Ramzan Special

Chicken Biryani

Briyanis is one the most desired food in India. Most of the times biryanis are cooked during festive seasons. You can also notice that this can be cooked and served during family get-togethers. There are varieties of biryani’s are available on cards for you to choose.

The most common and famous kind of biryani would be ‘Dum Biryani’ but here we shall cook a different kind of biryani. This recipe has been associated with me since long as my Mom used to cook this on special occasions. Hence the source of this biryani recipe is my Mom.

Ingredients

  1. 500 gms Chicken
  2. 2 Cups Rice
  3. 4 tbsp Oil
  4. 2 tbsp Ginger Garlic Paste
  5. 1 Onion
  6. 4 Tomatoes
  7. 2 Bay Leaves
  8.  1/2 Cup Milk
  9.  2 Cardamom
  10. 1 Cinnamon
  11. 5 Pepper Corns
  12.  2 tsp Coriander Power
  13.  1 tsp Chilli Power
  14.  1/2 tsp Biryani Masala
  15.  Salt to Taste

For Marinade

  1. 1 tbsp Dahi
  2. 1 tsp Ginger Garlic Paste
  3. 1 Pinch Tumeric Powder
  4.  1/2 Chilli Powder
  5.  Salt

How to Prepare

  1. In a bowl, add all the marinade ingredients and chicken. Marinade this for 30 – 45 minutes.
  2. Wash and soak the rice for 15 minutes.
  3. Heat oil in a heavy bottomed pan, put all the whole spices and splutter. 
  4. Add the sliced onion and fry till golden brown. 
  5. Now, add ginger garlic paste and sauté till the raw smell leaves. 
  6. Lower the flame and add milk, keep stirring for a minute. 
  7. Add coriander powder and fry for a while. 
  8. Now, add all the other spice powders and the sliced tomatoes. 
  9. Mix well and cook for atleast 3-4 minutes. 
  10. Add the marinade chicken, salt and cook covered till the chicken is almost cooked. 
  11. Pour 3 1/2 cups of water and bring to boil. Add the soaked rice to the boiling water and cook till done.
  12. ‘Chicken Biryani‘  is ready to serve with curd raitha.

Yogurt Chicken / Dahi Murg

Dahi Murg or Yogurt Chicken was a hit in my first try itself. It was my 2nd Wedding Anniversary and was expecting to make it more special with my new recipe. And, you wouldn’t believe that this recipe made my day. When I chose this recipe, I was little worried about the combination of yogurt with chicken. But, surprisingly this was a ‘WOW’!

This recipe was running in my mind for almost a month and I was waiting for an occasion. An occasion came and I knew that this is the day to try this out. The day began in my kitchen with gathering of all ingredients on my kitchen table and rechecking it thrice. I was very keen not to miss out any one of them which, I hadn’t.

Yogurt Chicken was a ‘success’ or you can call it ‘super success’ for my day. So, I bring in this recipe to share among you for YOUR SPECIAL DAY.

Ingredients:

1/2 Kg Chicken (boneless), 1/4 tsp Turmeric Powder, 1 1/2 tsp Ginger Garlic Paste, 1/2 tsp Chilli Powder, 1/4 tsp Pepper Powder,1/2 tsp Sugar,1/2 Garam Masala, 1/4 tsp Chicken Masala, 1 Cup Yogurt (100 ml), 1 Onion(sliced), 1 Tomato(puree), 2 tbsp Oil, Coriander Leaves, Salt to Taste

How to Prepare:

In a bowl, add chicken masala, chilli powder, 2 tsp yogurt, 1/2 tsp ginger garlic paste, turmeric powder and salt. Mix well and marinate the cleaned chicken pieces in this mixture. Keep this  in the fridge for 30 minutes.

Heat oil in a pan, fry sliced onions till golden brown. Add the remaining ginger garlic paste, tomato puree and slit green chillies. Sauté this for 3 – 4 minutes till the oil separates. Add the marinated chicken, water and cook covered till the chicken is tender. Now, add the beaten yogurt and sugar. Stir occasionally on low flame till the gravy thickens. Sprinkle pepper powder, garam masala, chopped coriander and cook for 2 minutes. Serve this with rotis/phulkas/nans or rice.

Chicken Green Curry/Chicken Green Gravy

Chicken Green Curry

This authentic dish ‘Chicken Green Gravy’ looks very tempting I think…

The main ingredients which makes this curry look green are the coriander leaves, palak leaves and green chillies. I’m sure you will find this dish very tasty accompanied with rotis or rice. So, try this recipe and have fun :)

So here’s the recipe…

Ingredients:
1/2 Kg Chicken, 1 Cup Tomato Puree, 1/2 tsp Chilli Powder, 1/2 tsp Garam Masala, 1/4 tsp Turmeric Power, Salt to Taste, 2 tbsp Oil

For Masala:
3 Cloves, 2 Cinnamon Stick, 3 Cardamom,1 Onion, 2 tsp Ginger Garlic Paste, 6 Green Chillies, 1 Cup Coriander Leaves, 10 Pepper Corns, 1/2 Cup Coconut, 5 Palak Leaves(cooked).

Method:
Blend all the masala ingredients to a smooth paste and set aside.
Heat oil in a pan and fry the masala paste for 2 minutes. Add the tomato puree and fry till the raw smell leaves. Now, add turmeric powder, chilli powder and chicken pieces. Add water as required and cook till the chicken is tender. Then, add garam masala and cook for a minute. Serve hot with rotis or rice.

Dum Murgh

Dum Murgh is a Hyderabadi special dish prepared during weddings and special occasions. This dish is prepared on dum with rich spices. The almonds and cashew nuts used in this recipe makes the dish very healthy and tasty.

Ingredients:

500 gm Chicken(boneless), 1 tsp Ginger Garlic Paste, 1 Cup Yogurt, 1 tsp Chilli Powder, 1 tsp Turmeric Powder, Salt to Taste, 1/4 tsp White Pepper Powder, 1/2 Cup Coconut(desiccated), 15 Almonds, 20 Cashew Nuts, 20 gm Chironji (dried melon seeds), 3 tbsp Oil, 3 Cardamon Pods, 1 small bunch Mint Leaves, 1/2 Cup Coriander Leaves, 3 Onions(sliced), 1 tsp Lime Juice, Pinch of Saffron

How to Prepare:

Marinate the chicken with ginger garlic paste, salt, turmeric powder, chilli powder and yogurt. Set it aside for an hour. Dry roast almonds, cashew nuts, chironji, desiccated coconut and grind to a fine paste. Add this paste to the marinated chicken once an hour is complete and mix well.

Heat oil in a pan, add chicken and cook on low heat. Once the chicken is half cooked, cover and put on dum for 30 minutes. Remove the lid, add cardamom, saffron and lime juice. Now, garnish with chopped onions, mint and coriander leaves.
