Paratha
Ingredients:
2 cups wheat flour, 1 cup water, 1/2 cup oil, 1/ 2 tsp. salt
How to Prepare:
Mix the flour, salt, and knead the dough, and put the tava on to heat. Half fill a small bowl with the oil or ghee and keep it handy. Knead the dough briefly and divide into medium sized portions. Roll one portion into a thin roti. Smear 1/ 2 tsp oil all over the surface. Fold it in haft, smear oil over the surface again and fold again. Roll it out and maintain the triangular shape. Medium heat the tava, place the paratha gently on it. Allow the parathas to rise in blisters and then turn it. Smear the surface with 1 /2 tsp oil and cook a minute or more on each side till both sides are rich brown. Serve hot.
Cabbage Paratha
Ingredients:
3-4 cups wheat flour, 1/4 cabbage (finely shredded), ½ tsp ginger garlic paste, salt, 1 tsp garam masala, green chillies (finely Chopped), coriander (chopped)
How to Prepare:
In a mixing bowl, add all the ingredients and knead well. Add water if required while kneading. Keep it aside for 10 – 15 minutes. Divide the dough in to medium sized balls. Roll out the dough and place it on hot tava. Cook both sides till rich brown. Serve hot with yogurt or pickle.
Aloo Paratha
Ingredients:
2 Cups Wheat Flour, 1 Tsp Jeera, 2 Tsp Chilli Powder, 2 Tbsp Oil, 2 – 3 Potatoes, 2-3 Tbsp Yogurt, Salt To Taste
How to prepare:
Boil 2 – 3 medium sized potato, remove skin and mash it.
In a mixing bowl put flour, jeera, chilli powder and salt. Mix it well. Add mashed potato; mix it with 3 – 4 tbsp yogurt, 2 tbsp cooking oil. Knead it to make soft dough and keep a side for about 15 to 20 minutes.
Medium heat the tava. Take small ball from dough and roll it. Apply a little oil on the surface and fold it into half. Again apply little oil and fold it. Roll it and maintain the triangular shape. Place it on the hot tava and cook both sides applying little oil until it turns rich brown. Serve hot.
Oats Stuffed Paratha
Ingredients:
1/2 Cup Oats, 1 Cup Wheat Flour, Little milk for kneading the dough (optional), Salt to Taste
For Stuffing:
Mix 50 gms Grated Paneer, 2 Green Chillies(chopped), Little Coriander Leaves, Salt to Taste
How to Prepare:
Make powder of oats and mix with wheat flour. Add milk/water and knead to make soft dough. Prepare small balls from the kneaded dough. Roll the paratha and place a little of the stuffing in the centre. Now, place another rolled paratha on top and press to stick on the previous paratha. Roast on both sides of the paratha sprinkling little oil. Serve hot.
