As a routine, after lunch and while later my little one takes a small afternoon nap. This is the time where I cook or bake something, click few pictures and If I’m not doing this, I sit in front of the computer to work on my blog. This doesn’t happen every day, it depends on the little one, he has his own time-table or maybe I cannot say that too. But in this very little time, I try and complete at least some of my work.
One evening, I made banana bread and it tasted scrumptious. Me and my little one just loved the bread, this was our evening snack. The banana bread had slight crunch here n there in every bite because of the nuts added. This gave an extra taste to the bread, overall it was our favorite evening and we enjoyed it. Banana Bread | Easy Banana Bread
All Purpose Flour/Maida – 1 Cup + dusting
Banana – 1
Butter – 100 gms, at room temp
Vanilla Essence – 1/2 tsp
Sugar – 1/2 Cup + 2 tbsp
Eggs – 2, at room temperature
Chopped Walnut & Cashew Nut – 5 tbsp
In a bowl, mash banana and set aside
Sieve maida and keep aside.
Cream butter and sugar together until sugar is dissolved. Once the sugar is completely blended, crack in eggs and beat for a while. Don’t over beat, this just needs to combine well.
Now, add vanilla essence and mashed banana and mix well.
Then add the sieved maida and mix well with a wooden ladle. Make sure no lumps are formed.
Pour it into a greased loaf pan.
Bake in a 350F/180C pre-heated oven for about 35 – 40 minutes or until a skewer inserted comes out clean.
Let the cake cool completely. Cut into slices and serve.
