Ghee Roasted Chicken Legs & A Sneak Peak into India Photo Video Trade Fair 2013

Hope you all had a beautiful weekend as we did. We were at the ‘India Photo Video Trade Fair 2013(Formerly known as Gujrat Photo Video Trade Fair), and we really enjoyed being there.  This fair is one of India’s most successful imaging and photo video exhibition.  They bring together top brands and suppliers under one roof. This fair is for all and especially for all the enthusiastic photographers and buyers. The best thing is that we get to meet all kinds of dealers related to photography and imaging under one roof. You get all kinds of equipment used for photography including flashlights, reflectors, photo sheets and much more.

Some of the top brands like Sony, Panasonic, Nikon, Canon were also present..

Let’s come to today’s recipe.  Ghee Roasted Chicken Legs was prepared few days ago to pair up with plain rice and sambar. And, I have to say this taste was just delicious and mouthwatering. Since it was roasted in ghee, it had wonderful aroma even before it was actually completed. It made us hungrier than we really were. The ingredients used are very simple yet there’s no compromise on the taste at all. So, try them and let me know your feedback.

Ghee Roasted Chicken Legs

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Chicken Legs – 2

Ginger Garlic Paste – 1/2 tsp

Onion - 1, sliced

Ghee – 3 tsp

Tomato – 1, small

Chill Powder – 3/4 tsp

Chicken Masala – 1/2 tsp

Sal to Taste

For Marinade:

Yogurt – 2 tbsp

Ginger Garlic Paste – 1/2 tsp

Turmeric Powder – 1/4 tsp

Salt – 1/4 tsp

Cumin Powder – 1/4 tsp

Lemon Juice – 1/2 tsp, optional

Clean and wash the chicken legs. I used skinless chicken, you can use with the skin on too. In a mixing bowl add the all the marinade ingredients along with the chicken and mix well. Let it rest in the fridge for minimum 2 hours.

Heat ghee in a kadai, sauté the sliced onions till they are light brown. Now, add chopped tomato, curry leaves, chilli powder & chicken masala. Mix well and fry for a minute.

Add the chicken marinade and cover the lid. Reduce the heat and add few spoons of water. Let it cook for few minutes. Stir occasionally.

Check for the seasoning and add salt if necessary. Mix well and cook until the chicken is cooked and tender.

Serve with rice and sambar or rasam.
