Poha is a very staple breakfast dish in Maharashtra. The spices added are mild and can be had during your tea time too. I have already posted Kanda Poha
before, you may even try that. There’s not much difference between them except for adding carrot just to make it more tasty and healthy. I’m sure even your kids will love this.
Carrot Poha | Carrot Aval Upma
Simple yet very tasty & healthy poha.
Poha/Pressed Rice – 1 Cup (thick variety)
Onion (diced) – 1
Mustard Seeds – 1/2 tsp
Carrot – 1, grated
Green Chillies – 2
Oil – 2 tsp
Curry Leaves – 5
Turmeric Power – 1/4 tsp
Lemon -1 tsp (optional)
Salt to Taste
Wash and soak poha for just 2 minutes. Drain water and set aside. Let there be little moisture in the poha.
Heat oil in a pan, add mustard seeds. When the mustard seeds start to splutter, add the chopped green chillies, curry leaves, diced onion and sauté for a minute. Don’t let the onions turn its color.
Now, add the grated carrot, turmeric and sauté few seconds. Add the drained poha along wih salt and mix to combine.
Cover the lid and cook for 1-2 minutes on low heat. Closing the lid keeps the flavor intact.
Then, add the lemon juice and mix again. Be gentle while you mix/combine.
Do not let the poha soak for more than the specified time otherwise it will be sticky when cooked.
