Chicken Do-Piaza

Chicken Do-Piaza is a well-liked Indian dish. Most of them ask what  does Do-piaza actually mean? While 'piaza' means onions and the next question arises  is the meaning of 'do'. And so, 'do' means double or twice. That actually means onions are used in two different stages in this dish. In this particular dish we don't add water. Ingredients: 750 Gms Chicken, 3 Medium Onions, 3 Green Chillies, 3 tsp Chopped Garlic, 1 tbsp Ginger(finely grated), 1 tsp Coriander Powder, 1 tsp Cumin Powder, 1/2 tsp Turmeric Powder, 1/2 Cinnamon Powder, 1/2 Cardamom Powder, 3 Cloves, 2 tsp Ghee, 2 tsp Oil, 2 Tomatoes(chopped), Salt to Taste How to Prepare: Slice half the onions and keep it aside. Put the remaining onions, ginger, garlic, green chillies to a blender. Blend this to a puree. Mix all the masala powders with this puree. Heat ghee and oil in a pan, fry the sliced onions, stirring frequently till golden brown. Remove the onions and keep aside. Add the blended mixture/paste to the oil and fry until oil separates. Add tomatoes, stir and cook for 10 minutes. Now, add the chicken pieces and mix well. Add salt and cook covered until chicken is tender. Add the fried onions, cover and simmer 5 minutes longer. Serve hot with rice or rotis.
