A number of recipes are very regular in our homes. However, there are many such recipes we seldom use in our regular usage in comparison to that when we dine outside for special occasions. One of the kinds of special or rare cases of chicken we normally find to taste is the ‘Chettinad chicken’. I have been following the trend in which this recipe ‘the chettinad chicken’ is being used or may be served in various occasions. You could find these in many group get together, birthday parties and so on. This is a recipe that we do not crouch on very regularly (on an average home made menu). However, if this fits your regular taste and would like to include this as one of the dishes in your dining table then, nothing like it. So, here I bring you the recipe that could fit in your dining table on a regular dining time or a special one. Ingredients: 500 Gms Chicken, 2 large Onions(finely chopped), 4 Medium Tomatoes(finely chopped), 1/4 tsp Turmeric Powder, 2 tsp Ginger & Garlic Paste, 1 String Curry Leaves, 2 tbsp Oil, 3 Green Chillies Salt to Taste For Masala: 5 Dry Red Chillies, 2 Javatri, 2 Cloves, 2 Green Cardamoms, 1 Bay Leaves, 1/2 tsp Fennel Seeds, 1/2 tsp Cumin Seeds, 1/2 tsp Fenugreek Seed, 2 tsp Coriander Powder, 1 tsp Pepper Corns, How to Prepare: Fry all the masala ingredients and grind to fine powder. In a pan, heat oil and add curry leaves (with stem), onions and green chillies. When the onions turns golder brown, add ginger garlic paste and fry for 2 minutes. Then, add tomatoes, turmeric powder and the chicken with little water and cook until chicken gets tender. Add the ground masala and salt and saute well. Fry for 5 minutes until the raw smell leaves. Serve hot.
